Have you ever had one of those days where you really just don’t feel like doing anything?? Well… I’m having one of those days and quite frankly it’s been one of those weeks. I know there’s so much I need to be doing, but I just don’t feel like doing them. Anyone want to come and help me?? I’ll pay you in yummy goodness aka food!
I think I want to blame senioritis on my whole laziness behavior. Graduation is in less than a month and I couldn’t be more excited except I don’t know exactly what I’m going to do afterwards. Ohh well, everything will be ok! I’m ready to be done with school for good! Unless….. someone else besides my pocketbook wants to pay for me to get my masters Image may be NSFW.

I’ve already started packing and taking car loads of stuff home to my moms so there’s not as much to move in a few weeks, but ugh I just have so much stuff it’s ridiculous lol. I actually still haven’t figured out who’s going to help me move yet. Is all I need is someone to offer up their truck to pull my cargo trailer… yes I have a 24′ cargo trailer because I have wayyyyy too much stuff. Anyway…..
I can’t wait to be back home on the farm for good in a few weeks. My nephews are joining 4-H and are going to show cattle. I’m super excited to help them because I miss showing, A LOT. The show babies will be coming over to my house so I can help the nephews. The calves are going to consume a lot of my time during the winter because well… if there’s a bunch of snow on the ground I’m not going to be doing much else. I’m hoping to have the boys show in some open cattle shows this spring to help them get some more experience since it’s their first year. Yes, yes I’m very excited!! I will have to update you all about the progress of the calves. I mean there’s a lot that goes into getting calves ready for shows. First you got to tame them down, halter break them, make sure the steers are gaining properly, get them used to people, noises, baths, getting hair cuts… ya there’s a lot of work that goes into showing! But, the end result is completely worth it and I wouldn’t change any of it for the world. I strongly believe in having animals to teach responsibilities and making a best friend out of the deal is just part of the satisfaction!

It took me awhile to jump onto the pumpkin bandwagon this fall, but now that I’m on it… I just can’t get enough!! My taste testers are really going to get tired of pumpkin. Maybe I should start on peppermint, fudges, and chocolate?? I mean who really gets tired of chocolate? These Layered Pumpkin Cheesecake Bars help satisfy that chocolate craving with a chocolate cheesecake layer and a pumpkin layer. Yummy! Top these layered bars off a sour cream layer and chocolate chips… Perfection!

- 1 1/4 cups graham cracker crumbs
- 1/4 cup sugar
- 1/3 cup butter, melted
- 2-8 ounce cream cheese, softened
- 1 3/4 cups sugar
- 3 eggs
- 1 cup pumpkin puree
- 1/2 teaspoon pumpkin pie spice
- 1/2 teaspoon vanilla
- 1/4 teaspoon salt
- 6 ounces semisweet chocolate, chopped in pieces
- 2 tablespoons butter
- 1 1/4 cup sour cream
- 1/4 cup sugar
- Preheat oven to 325*F. Line a 9x13 baking dish with aluminum foil; set aside.
- In a medium bowl, combine graham cracker crumbs, 1/4 cup sugar, and 1/3 cup melted butter. Press mixture evenly into bottom of the prepared baking pan; set aside.
- In a large mixing bowl, cream together cream cheese and 1 3/4 cup sugar. Beat until smooth. Add eggs, one at a time, beating on low after each addition just until combined. Beat in pumpkin, spices and vanilla just until combined. DO NOT OVERMIX.
- Remove 1 1/4 cups of mixture.
- In a small heavy saucepan, combine chocolate and 2 tablespoons butter. Stir over low heat until melted. Whisk chocolate mixture slowly into the reserved 1 1/4 cup pumpkin mixture. Pour over crust evenly.
- Bake for 15 minutes.
- Carefully pour the remaining pumpkin mixture over baked chocolate layer, spreading evenly.
- Bake for 40-45 minutes or until filling is puffed and center is set. Cool on wire rack for 30 minutes.
- In a small bowl, combine sour cream and 1/4 cup sugar. Gently spread over baked cheesecake. Cool completely. Cover and chill for at least 3 hours. Cut into bars. Garnish with mini chocolate chips or chocolate curls
- **Store in an airtight container up to three days**
